Antioxidant Rich Blueberry Treat Recipe: Sweet and Nourishing

The beauty of this recipe lies in its simplicity and versatility. Using ingredients like ground almond, buckwheat flour, and brown rice flakes, these bites provide a nutrient-dense base that’s naturally gluten-free. Buckwheat flour adds a mild nutty flavor and a boost of fiber, while brown rice flakes contribute to a satisfying crunch. Ground almonds not only provide a delightful texture but are also packed with healthy fats and vitamin E, essential for skin health and inflammation reduction.

To bring out the best of these ingredients, we’ve added a touch of ground cinnamon, nutmeg, and ginger. These spices not only warm up the flavor profile but also offer numerous health benefits, from improved digestion to anti-inflammatory properties. A hint of Himalayan salt enhances the sweetness of the date syrup, which is used as a natural sweetener. Date syrup is an excellent alternative to refined sugar, providing a caramel-like flavor and additional minerals such as potassium and magnesium.

The use of hazelnut butter (or cashew, if you prefer) adds a creamy richness to the mix, binding the ingredients together without the need for eggs or dairy. Nut butter is a fantastic source of protein and healthy fats, making these bites a satisfying and energizing treat. For the fruity layer, we’ve combined juicy blueberries with coarsely grated pear and a touch of lemon juice. – 100g ground almond
– 80g buckwheat flour
– 70g brown rice flakes
– 1 tbsp ground cinnamon
– 1 tsp ground nutmeg
– 1 tsp ground ginger
– 2 tsp arrowroot
– 1/4 tsp baking soda
– ½ tsp Himalaya salt
– 130g hazelnut butter (or cashew)
– 100g date syrup, plus 1 tbsp for fruit
– 1 tsp vanilla extract
– 1 lemon, zest and some juice
– 200g blueberries
– 1 pear
– 75g hazelnuts, chopped
– 25g gluten-free flakes (oat, quinoa, buckwheat or rice)

Additionally, you will need a 20 x 20 x 3cm square baking tin and baking parchment to line the tin.

To prepare, here are the steps:

  1. Preheat your oven to 160°C (320°F) and line a 20 x 20 x 3 cm baking tin with parchment paper.
  2. In a large bowl, mix the dry ingredients: 100g ground almond, 80g buckwheat flour, 70g brown rice flakes, 1 tbsp ground cinnamon, 1 tsp ground nutmeg, 1 tsp ground ginger, 2 tsp arrowroot, 1/4 tsp baking soda, and 1/2 tsp Himalayan salt.
  3. In a separate bowl, combine 130g hazelnut butter with 100g date syrup, 1 tsp vanilla extract, and the zest and juice of 1 lemon. Stir well until the mixture is smooth but stiff.
  4. Add the dry ingredients to the nut butter mixture and mix using your hands until well combined. Press 400g of this mix into the base of the prepared tin and flatten with a spatula.
  5. In another bowl, mash 200g blueberries and add 1 tbsp lemon juice. Grate 1 pear and fold it into the berries along with 1 tbsp date syrup. Spread this fruit mixture evenly over the nutty base.
  6. To the remaining nut mixture, add 75g chopped hazelnuts and 25g gluten-free flakes (oat, quinoa, buckwheat, or rice). Crumble this over the fruit layer and press gently to help it adhere.
  7. Bake for 15 minutes, then remove from the oven and press the topping into the fruit again. Bake for an additional 15-20 minutes until the topping is golden brown.
  8. Allow the bites to cool completely in the tin (at least 30 minutes), then slice into 24 squares.
