Serves 2 large portions for main dish and 4 to 6 for a starter or a side.
- 400g favorite white fish filet (sea bream, sea bass, ombrine), cut into cubes
- 1 medium size mango, cut into cubes
- 1 medium size cucumber, cut into cubes
- 1 medium size avocado, cut in small cubes.
- Juice of 2 freshly pressed lemons
- 1/2 small onion, finely chopped
- A small piece of ginger, grated
- A bunch of coriander, finely chopped
- Salt and pepper to taste
To prepare your Summer Ceviche, follow these steps
- In a bowl, combine the fish cubes with the freshly pressed lemon juice. Ensure the fish is fully submerged. Cover and refrigerate for 30 minutes to “cook” the fish in the citrus juice.
- After 30 minutes, drain off some of the excess lemon juice, leaving enough to keep the fish moist and flavorful.
