Full Recipe for Healthy Sugar-Free Brownies

Ingredients

  • For the Brownies:
    • 250g cooked black or red beans (Please ensure they are well drained to avoid any extra moisture and extended cooking time)
    • 15g ground flaxseed (2 tbsp)
    • 15g raw cacao powder (2 tbsp)
    • 80g maple syrup or honey
    • 50g coconut oil, melted
    • 1 tsp pure vanilla extract
    • 1/4 tsp baking soda mixed with 1 tbsp lemon juice
    • 50g chopped walnuts or dark chocolate chips
    • A pinch of sea salt or Himalayan salt
  • Optional Toppings:
    • Extra chocolate chips, nuts, seeds, dried fruits
  • For the Icing (optional):
    • 45g nut butter (3 tbsp)
    • 20g raw cacao powder (3 tbsp)
    • 45g raw coconut oil (3 tbsp)
    • 40g raw honey (2 tbsp)

Preparation

  1. Preheat your oven to 170°C (340°F).
  2. Blend the base: In a good food processor (we are big fans of our Thermomix, we just love it’s simplicity and efficacy making any though job look so simple), combine all ingredients except the chocolate chips until smooth. Add a tablespoon of water or nut milk if too thick.
  3. Add the extras: Stir in the chocolate chips, then pour into a lined 20cm square tin, adding any optional toppings.
  4. Bake: For about 20 minutes (less if making individual cakes). Let cool for at least 10 minutes before applying icing.
  5. Make the icing: Melt all ingredients together in a small saucepan over low heat, stirring until smooth. Cool to desired consistency before spreading.
