Recipe: How to Make the Easy Thermomix GRAIN-FREE COCONUT BREAD

Yield: 1 small loaf (10 slices)

Ingredients:

  • 100g Almonds
  • 30g Cold-Pressed Olive Oil
  • 30g Filtered Water
  • 2 Eggs (medium to large)
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp Honey (optional)
  • 35g Arrowroot Powder
  • 15g Ground Flaxseed
  • 10g Coconut Flour
  • 1/2 tsp Baking Soda (heaped)
  • 1/4 tsp Unrefined Salt

Topping: caraway, anise, fennel, cress, sesame seeds, or other seeds of your choice.

Instructions:

  1. Preheat your oven to 170C and prepare a small loaf pan with parchment paper.
  2. ⁠Place almonds into the Thermomix bowl and blend 10 sec/speed 8 to get ground almonds. Transfer to a medium bowl and set aside.
  3. In the Thermomix mixing bowl, add eggs, water, oil, vinegar, honey and mix 10 sec/speed 3.
  4. ⁠Add in the dry ingredients, mix 8 sec/speed4. You should have a cake-like batter texture)
  5. Pour into the prepared loaf pan, spread out evenly, tapping pan on the kitchen top to evenly distribute it.
  6. Bake for 30 to 40 minutes or until top is golden brown and a toothpick inserted comes out clean.
  7. ⁠Remove from oven. Allow bread to cool for 20 minutes then lift the loaf holding the sides of the parchment paper and continue to cool on a rack until fully cooled before slicing and serving.
  8. ⁠If you have leftover, store in an airtight container in fridge for up to 5 days.
