Transform your water into a refreshing and healthful soda substitute with this simple water kefir recipe:

Ingredients:

  • 1L filtered water
  • 60g organic sugar
  • 60g water kefir grains
  • 1 dry fig
  • 1/2 lemon, peeled and sliced
  • 2 slices of ginger

Instructions:

  1. In a jar, mix the water and sugar until the sugar completely dissolves.
  2. Add the water kefir grains, fig, lemon slices, and ginger into the jar.
  3. Let the mixture ferment for 1 to 2 days, tasting it daily to check the flavor.
  4. Once fermented, remove the fig, lemon, and ginger, then strain out the kefir grains.
  5. For added flavor and fizz, perform a second fermentation by adding mashed fruit, additional lemon, ginger, and spices to the strained liquid. Leave it for 24 hours.
  6. After the second fermentation, strain the liquid and store it in an airtight glass bottle in the fridge.

  • Start with making small quantities if you are new to fermented drinks to avoid bloating.
  • Avoid using metal utensils or containers near the kefir grains; use wood or plastic instead.
