- 1 tsp toasted sesame oil
- 1 tsp tamari or coconut aminos
- 1 tsp freshly grated ginger
- 150g cooked tri-color quinoa (about 50g dry)
- 100g organic edamame, steamed
- 1/2 avocado, cubed (75g)
- 1/2 ripe mango, diced (75g)
- 1 small cucumber, thinly sliced (75g)
- 1 handful fresh arugula or baby spinach (30g)
- 15g pumpkin seeds
- 15g sunflower seeds
- 15g walnut halves, crushed
- Juice of 1/2 lime
Optional toppings: seaweed flakes, sesame seeds, microgreens
Dressing:
- 1 tbsp tahina
- 1 tsp tamari
- 1 tsp lime or lemon juice
- 1–2 tsp water to thin
- Pinch of black pepper
Instructions:
- Marinate your protein (salmon or tofu) in sesame oil, tamari, and ginger. Let sit for 10 minutes, then lightly sear or bake.
- In two serving bowls, layer the cooked quinoa and greens.
- Add edamame, avocado, mango, cucumber, and your protein.
- Toast the seeds briefly in a dry pan, then sprinkle over the bowl along with crushed walnuts.
