Whole, colorful ingredients like avocado, mango, and spinach bring antioxidants and fiber to your anti-inflammatory poke bowl, gently supporting detox and hormone balance from within.

Ingredients:

  • 2 wild salmon fillets (120g each) or 200g organic tofu, cubed
  • 1 tsp toasted sesame oil
  • 1 tsp tamari or coconut aminos
  • 1 tsp freshly grated ginger
  • 150g cooked tri-color quinoa (about 50g dry)
  • 100g organic edamame, steamed
  • 1/2 avocado, cubed (75g)
  • 1/2 ripe mango, diced (75g)
  • 1 small cucumber, thinly sliced (75g)
  • 1 handful fresh arugula or baby spinach (30g)
  • 15g pumpkin seeds
  • 15g sunflower seeds
  • 15g walnut halves, crushed
  • Juice of 1/2 lime

Optional toppings: seaweed flakes, sesame seeds, microgreens

Dressing:

  • 1 tbsp tahina
  • 1 tsp tamari
  • 1 tsp lime or lemon juice
  • 1–2 tsp water to thin
  • Pinch of black pepper

  4. Toast the seeds briefly in a dry pan, then sprinkle over the bowl along with crushed walnuts.
