Pineapple, lime & chia glow pudding recipe (serves 2–3)

Et voilà! Creamy, citrusy, and packed with nutrients—this pineapple chia pudding is ready to fuel your day, help you gain energy and fuel your vibrant gut health.

Ingredients

  • 3 thick slices of fresh pineapple
  • 1 lime (juice + zest) – choose organic if possible
  • 2 tbsp chia seeds
  • 250ml plant-based milk (almond, coconut, or cashew)
  • A few fresh mint leaves
  • A handful of blackberries as a topping

Instructions

  1. Blend & zest: Blend the pineapple slices with the lime juice, a bit of zest, and the mint leaves until smooth.
  2. Combine: Add the plant-based milk and chia seeds. Blend again briefly, then stir after 5–10 minutes to prevent the seeds from clumping.
  3. Chill: Pour into jars or bowls and let it rest in the fridge for at least two hours (or overnight) to set.
  4. Top & serve: Garnish with blackberries and fresh mint leaves before digging in.

Tip: If your lime isn’t organic, soak it for 15 minutes in 1L of filtered water with 1 tablespoon of baking soda. Scrub and rinse well to reduce pesticide residues.
