DETOX Cauliflower Couscous Salad

This culinary creation is more than a mere salad; it’s a vibrant, nutrient-packed dish designed to support your body’s natural detoxification processes. By incorporating ingredients rich in fiber, antioxidants, and sulfur compounds, alongside essential amino acids from sources like quinoa, hemp seeds, and sprouted mung beans, this salad is a powerhouse of detox-friendly nutrients. It’s crafted to not only satisfy your taste buds but also to keep you nourished and energized while your body focuses on detoxification.

Recipe – Serves: 6

Ingredients for the Salad

  • 200g quinoa
  • 30g sprouted mung beans
  • 30g hulled hemp seeds
  • 1 large cauliflower
  • 2 cucumbers
  • 1 red onion
  • 1 red or yellow bell pepper
  • 1/2 bunch fresh mint
  • 1/2 bunch fresh parsley
  • Optional: 1/4 small red cabbage

Ingredients for the Dressing

  • Juice of 1 lemon
  • Juice of 1/2 orange
  • 4 tbsp cold-pressed olive oil
  • 1 tbsp toasted sesame oil
  • Salt, pepper, cumin, and sumac, to taste

Preparation

  1. Cook the quinoa as per the package instructions, allow to cool, and set aside.
  2. Rinse the sprouted mung beans, dry them, and mix with hemp seeds in a bowl.
  3. Soak all vegetables in a baking soda solution to minimize pesticide residues, rinse well, and dry.
  4. Grate the cauliflower to achieve a couscous texture and finely chop all vegetables.
  5. Whisk together dressing ingredients and combine with the salad. Refrigerate to blend flavors.
  6. Before serving, add chopped herbs and adjust seasoning.

Alternative if you suffer from hypothyroidism

For those with hypothyroidism or Hashimoto’s thyroiditis, it’s recommended to use only half the amount of cauliflower and to steam or bake it for 20-25 minutes. This process helps to deactivate goitrogens that could potentially affect thyroid function. Despite this adjustment, you’ll still benefit from the sulforaphane, which plays a crucial role in enhancing the body’s detoxification processes and reducing damage from free radicals.
