That’s why I created this. A rich, creamy, anti-inflammatory chocolate ice cream that checks every box: sugar-free, dairy-free, easy to make… and genuinely good for you.

Cashew or almond milk adds creaminess without dairy. And vanilla ties it all together with that nostalgic flavor we all love.

Recipe: Anti-inflammatory chocolate ice cream
(serves 10-12, protein: 3g/portion)
Ingredients
- 2 x 400ml full-fat coconut milk (chilled overnight)
- 50g unsweetened cacao powder
- 200g pitted dates (if dry, soak for 10 minutes in warm water then drain)
- Hot water (as needed to make a paste)
- 2 tsp vanilla extract or ½ tsp vanilla seeds
- 120g unsweetened cashew or almond milk
Instructions
- Chill a large mixing bowl in the freezer for 10 minutes
- Blend the dates with hot water to form a thick paste. Set aside
- Scoop the solid part of the coconut milk into the chilled bowl
- Whip until smooth and creamy
- Add cacao powder, vanilla, nut milk, and half of the date paste. Whip again until well combined
- Taste and add more date paste if needed
- Pour into a parchment-lined freezer-safe container. Cover loosely with plastic wrap, then foil
- Freeze for 2 hours for a soft-serve texture, or overnight for firmer scoops
- Let sit for 20 minutes before serving. Use a scoop warmed under hot water for easy serving
It’s as simple as that. No ice cream maker needed. Just a few clean ingredients and a little chill time.
