Your new favorite recipe: flour-free, flat-belly, high protein bread

Here’s how to make it:
- 20g ground flaxseed
- 20g psyllium husk
- 150g filtered water
- 30g cold-pressed olive oil
- 1 egg
- 100g wholegrain flakes (oat, quinoa, buckwheat…)
- 100g pumpkin seeds
- 100g sunflower seeds
- 100g nuts (almond, pecan, hazelnut or a mix)
- 100g dried fruits (raisins, figs, prunes, dates or a mix)
- A good pinch of salt
Method:
- Mix all ingredients well.
- Press the mixture into a small buttered or parchment-lined loaf tin. Sprinkle with extra seeds or flakes if desired.
- Bake in a preheated oven at 170°C (340°F) for 50 minutes.
- Remove from the tin and bake for an additional 10 minutes for a crispier crust.
- Cool completely (about 2 hours) before slicing.
This bread is versatile. Use it for your morning toast, as a base for a protein-rich sandwich, or alongside a nourishing soup for lunch.
