- 125g cashews, soaked for 3–4 hours (start with 100g dry cashews)
- 2 tbsp nutritional yeast flakes (or ½ tbsp organic Tamari sauce)
- 60ml water (add more if needed)
- ½ lemon, juiced
- ¼ tsp unrefined salt (omit if using Tamari sauce)
Instructions
- Soak & Rinse: Drain the soaked cashews and rinse them well.
- Blend: Place the cashews, nutritional yeast (or Tamari), water, lemon juice, and salt into a food processor.
- Customize: Blend until smooth, adding extra water if needed for your desired consistency.
- Enjoy: Use as a dip, spread, or dressing for a boost of protein and flavor.
Mediterranean version
- Add 1 clove of crushed garlic
- Fold in 1 tbsp of freshly chopped herbs (oregano, rosemary, thyme, parsley) or 1 tsp dried herbs
- Optional: Mix in some chopped black olives
