- 425g homemade pumpkin puree, or you can use the canned version (NOT pumpkin pie filling)
- 120g active sourdough starter
- 150g maple syrup
- 50g soft dates
- 75g coconut oil
- 1 large egg (or egg substitute)
- 1 tsp vanilla extract
- Stevia drops to taste (10–20)

Dry ingredients:
- 200g whole wheat flour
- 40g ground almonds or sunflower seed
- 1 tsp sea salt
- ½ tsp baking powder
- ½ tsp baking soda
- Homemade pumpkin spice seasoning: 2 tsp cinnamon, 1 tsp ground ginger, ¼ tsp ground cloves, ¼ tsp ground nutmeg
Optional:
- 70g of walnuts, pecans or pumpkin seeds
