MAKES 12-15 madeleines

  • 100g               Eggs (around 2-3), ideally organic and pasture-raised
  • 50g                 Coconut sugar (available at Rootz Organics)
  • 1 tbsp             Raw honey
  • 1 tsp                Vanilla extract or vanilla powder
  • A pinch of unrefined salt
  • 1/4 tsp            Baking soda 

  • 1/4                  Lemon juice
  • 50g                 Wholegrain sorghum flour (ideally sprouted, available at Rootz Organics)
  • 50g                 Wholegrain oat flour (ideally gluten-free and sprouted)
  • 100g               Extra virgin, cold pressed coconut oil melted (available at Rootz Organics)

To prepare, here are the steps

  1. Whisk wet ingredients: In a food processor, whisk eggs, coconut sugar, honey, vanilla, and salt until frothy and well combined (about 1 to 2 minutes).
  2. Mix together dry ingredients: In a separate bowl, mix the sorghum flour, oat flour.
  3. Add baking soda and drizzle with lemon juice
  4. Combine Wet and Dry: While the food processor is running, gradually add the flour mix to the wet ingredients, alternating with the oil. Continue mixing until everything is well combined and the batter is smooth (this should take about 2–3 minutes).
  5. For best results: cover the batter and chill in the fridge for a couple of hours or overnight       .
  6. Prepare for baking: Preheat the oven to 170oC and grease the madeleines tray with some coconut oil.
  7. Fill molds: Spoon the batter into the madeleine molds, filling each mold about 3/4 full.
  8. Bake: for 8-10 minutes or until golden brown and develop their signature hump.
  9. Cool: Allow the madeleines to cool in the tray for at least a minute then transfer to a cooling rack.
