For many of us, chocolate is the ultimate comfort food—a rich, indulgent treat that satisfies cravings and lifts our mood. But let’s be honest: traditional chocolate bars are often loaded with refined sugars, inflammatory ingredients, and artificial additives that spike blood sugar, trigger cravings, and lead to weight gain.

And here’s the twist: I started my career working for a multinational confectionery brand making some of the world’s most famous chocolate bars. But after years of working in this industry, I saw firsthand how sugar, processed oils, and artificial ingredients negatively impact gut health, hormone balance, and long-term well-being.

Chocolate pistachio bars recipe
Ingredients (*)
For the date filling:
- 200g soft dates (Medjool preferred)
- 100g walnuts
- 2 tbsp cacao powder
- 2 tbsp tahina
- 1 tbsp grass-fed ghee
- ½ tsp vanilla powder
- ½ tsp cinnamon
- Pinch of salt
For the crunch layer:
- 50g organic rolled oats
- ½ tbsp grass-fed ghee
- 1 tsp date molasses or maple syrup
For the pistachio paste:
- 120g raw pistachios
- 1 tbsp rose water or orange blossom
- 1 tbsp honey or date molasses
For the chocolate coating:
- 85g dark chocolate (100%), we took our from Mirzam, just love this place and the work they do !
- 2 tbsp honey, date molasses, or maple syrup
- 1 tbsp grass-fed ghee
- 25g crushed pistachios for garnish

Instructions
Step 1: Prepare the crunch layer
- Toss oats, ghee, and sweetener together and spread on a lined baking tray.
- Bake for 7-10 minutes until golden and crispy. Let cool.
- Preheat the oven to 150°C.
Step 2: Make the pistachio paste
- Blend pistachios until a paste forms.
- Add rose water and sweetener and blend until smooth.
Step 3: Prepare the date filling
- Blend dates, walnuts, cacao, tahini, ghee, and spices into a sticky dough.
Step 4: Assemble the layers
- Press half the date mixture into molds.
- Spread a layer of pistachio paste on top.
- Sprinkle the crunchy oat layer evenly.
- Add the remaining date filling and press down.
- Freeze for 20-30 minutes to set.
Step 5: Coat with dark chocolate
- Melt dark chocolate, ghee, and sweetener over a double boiler.
- Dip bars one by one, coating them completely.
- Garnish with crushed pistachios.
- Chill for at least 1 hour before serving.
