Bone broth ice cream sounds like a contradiction. Broth is savory, ice cream is sweet, and putting them in the same sentence feels like a joke. But once you taste this bone broth ice cream, the strangeness disappears fast. What you get is a creamy, naturally sweet, berry-and-banana treat with a quiet nutritional boost hiding underneath.

The secret is gelatinous chicken bone broth, blended in cold, alongside frozen banana and berries. You cannot taste it. What you can feel, if you pay attention to the texture of a good bone broth before it goes into the blender, is something worth understanding, because it tells you a lot about what you are actually eating.

This is the kind of recipe I love most in my naturopathic chef practice, one that tastes like a treat but is quietly working for you. This bone broth ice cream needs no churning and no ice cream maker, just a blender and five minutes.

What is bone broth ice cream

Bone broth ice cream is a 5-minute, blended frozen dessert built on frozen fruit for creaminess, the same principle behind classic banana nice cream, with cooled or lightly chilled bone broth blended in as the nutritional backbone. It is not a savory dish. The bone broth adds body, protein and a subtle richness, while the frozen banana and berries carry all the sweetness and flavor.

This particular bone broth ice cream uses gelatinous chicken bone broth, antioxidant-rich mixed berries, and banana, blended smooth and eaten right away, more like soft-serve than a scoop from the freezer.

Why the gelatinous texture matters

If you have made or bought bone broth before, you have probably noticed that a good batch turns thick and jiggly once it is chilled, almost like a loose jelly. That is not a flaw. This gelatinous texture when refrigerated is generally taken as a sign of a well-made, quality broth.

Here is what is actually happening. Bones and connective tissue are rich in collagen, and a long, slow simmer, often 12 to 24 hours for a true bone broth, breaks that collagen down into gelatin. When you chill the broth, the gelatin sets, which is why it gels. A broth that stays completely liquid when cold usually means less collagen made it into the pot, often because it was simmered for a shorter time or made with fewer collagen-rich parts like knuckles, feet or marrow bones.

So when a recipe calls for gelatinous bone broth, like this one does, it is really asking for a broth that is genuinely rich in collagen-derived gelatin, not just flavored water.

Bone broth contains amino acids released from its collagen and gelatin, including glycine, proline and glutamine, along with minerals like calcium, magnesium, potassium and zinc. A 2025 review in the journal Digestive Diseases and Sciences, looked at how these nutrients interact with the gut barrier, the lining that keeps your digestive system working properly. The review found that these amino acids and minerals may help support the gut lining, calm inflammatory activity, and encourage the protective mucus layer that lines the gut.

This is also why bone broth has been a fixture in traditional kitchens for generations, long before anyone studied glycine or proline in a lab. Cooks and grandmothers reached for a simmering pot of bones whenever someone needed a little extra care, and that instinct lines up with what researchers are now starting to explore. It’s a good reminder that food has always been one of our first tools for feeling better, bone broth included.

More than simple pleasure: what this dessert actually gives your body

This is what makes this bone broth ice cream more than just a nice-tasting treat. A typical fruit nice cream is already a decent choice, dairy-free, no refined sugar, naturally sweet from the fruit itself. Adding gelatinous bone broth takes it further, without changing how it tastes.

Per serving, you are adding a meaningful hit of protein, roughly 4 to 5g from the broth, banana and berries alone, or 20 to 25g if you blend in a scoop of protein powder for a more substantial version. You are also adding the collagen-derived amino acids and minerals discussed above, plus whatever antioxidants and fibre the berries and banana already bring to the bowl. So instead of a dessert that is simply “not bad for you,” you get one that is actively contributing something: protein for satiety, gut-supportive amino acids and minerals, and antioxidants, while still tasting like a genuine treat.

  • 1 frozen banana, sliced before freezing
  • 1 cup (about 150g) frozen mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup (60ml) gelatinous chicken bone broth, cooled or lightly chilled
  • Stevia drops, to taste (optional, if you want more sweetness)
  • 1 scoop protein powder of your choice (optional, for a more protein-rich version)

Estimated protein: roughly 4 to 5g per serving without the protein powder, or roughly 20 to 25g with a standard scoop added (varies by brand).

Allergy note: this recipe may contain celery, if your bone broth recipe includes celery among its ingredients.

Instructions

  1. Place the frozen banana, frozen berries and bone broth in a small blender. Blend until smooth and creamy, scraping down the sides if needed.
  2. Taste, and add a few stevia drops if you would like it sweeter.
  3. For a more protein-rich treat, add the protein powder and blend again until fully combined.
  4. Serve immediately, while it is still soft-set and creamy.

Tips and variations

  • Frozen banana is what gives this its creamy, soft-serve texture, so freeze sliced banana ahead of time rather than using a fresh one.
  • Swap the berry mix for frozen mango or pineapple for a tropical version.
  • If your blender struggles with fully frozen fruit, let the banana and berries sit at room temperature for 2 to 3 minutes before blending, or use a high-powered blender.
  • Batch-freeze sliced banana and portioned berries in bags so this comes together even faster on a busy day.
  • Dirty Dozen check: strawberries are typically on the Dirty Dozen list, so use organic strawberries if you can, or swap in a lower-pesticide berry like blueberries if organic strawberries are not available.
